banana bread

Three new posts in one night! I should probably spread these out a little better but I had some extra time tonight which seems to be rare these days so I decided to take advantage. This is my favorite banana bread and it’s fairly healthy and really easy to make. I got the recipe from Cooking Light so I can’t really take any of the credit. I’m actually thinking about making it for Finley’s first birthday cake… with frosting of course!
- 2 cups flour
- 1/2 tsp salt
- 1 cup sugar
- 1/4 butter, softened
- 2 large eggs
- 1 1/2 cups mashed banana (about 3... I always usually throw in an extra)
- 1/3 cup plain low-fat yogurt
- 1 tsp vanilla
- Preheat oven to 350
- Combine flour, baking soda, and salt and set aside.
- Place sugar and butter in large bowl and beat with mixer (about 1 minute). Add eggs, stir. Add banana, yogurt, vanilla. Add dry ingredients. Mix.
- Spoon into 8/12 x 4 1/2 inch loaf pan coated with spray.
- Bake for 1 hour (sometimes I have to bake a little longer but be sure to check at an hour).
- You can also add cloves (1/8 tsp), cinnamon (1/2 tsp) and nutmeg (1/4 tsp) - if you want to mix it up. I sometimes throw in chocolate chips because chocolate makes everything better!
