BBQ Pulled Pork

I love the Crock Pot – it’s simple and creates the most delicious meals. So I was excited to discover how good and easy the following recipe is.

  • Pork – I used a pork loin roast (2.25 lbs), but you can use various cuts of pork (I just got what was on sale!)
  • 1 can of root beer (I know! How great is that?!)
  • 1 jar of your favorite bbq sauce (I used spicy Uncle D’s and picked it up at QFC)
  1. Put pork in the slow cooker and pour the root beer over the meat. Cook on high for 6 hours or on low for 10 hours.
  2. With an hour left on the cooker shred the meat and add 1/2 to 3/4 of the bbq sauce and mix well. I turned the cooker to low for an additional hour once the 6 hours was up.
  3. Serve on buns and enjoy! We put bread and butter pickles on the sandwiches and you could add coleslaw too.

Even better is this will make great leftovers!
